This roasted sweet potato and onion soup is the perfect way to warm up. It’s creamy, comforting, and full of flavour thanks to the combination of sweet potatoes, onions, garlic, herbs, and spices. Plus it’s super simple to make – just pop everything in the oven for an hour or so and you’re good to go! Serve with crusty bread for a hearty meal that will have everyone asking for seconds (or thirds!).

Roasted Sweet Potato and Onion Soup

To get started, you’ll need the following ingredients:

  • 2 large sweet potatoes, peeled and diced into 1-inch cubes
  • 2 large brown onions, peeled and diced into 1-inch cubes
  • 4 cloves of garlic, finely chopped
  • 1 tablespoon of olive oil
  • 2 tablespoons of fresh thyme leaves
  • 1 teaspoon of smoked paprika
  • 4 cups of vegetable s
  • Salt and pepper to taste

Preheat your oven to 375°F/190°C. Place your prepared sweet potatoes and onions in a large baking dish. Drizzle with olive oil and sprinkle with salt and pepper. Add the chopped garlic, thyme leaves, and smoked paprika. Toss everything together until evenly combined. Roast in the oven for 45 minutes until the vegetables are golden brown in colour. Be sure to stir once or twice during cooking time to ensure even roasting.

Once finished roasting, remove your vegetables from the oven and transfer them to a large pot or Dutch oven over medium heat on the stovetop. Pour in your vegetable broth or stock along with any juices from the baking dish (if desired). Bring everything to a gentle simmer then reduce heat to low and cover with a lid. Simmer for 15 minutes before turning off the heat entirely.

Finally, it’s time to blend! Carefully transfer the soup mixture into the blender leaving room for steam ventilation if necessary, I personally like to use a stick blender in the pot. Less washing up! . Blend until smooth then return to the stove over low heat if needed; adjust seasoning as desired with salt & pepper at this point too (taste test first!). Serve soup topped with freshly chopped parsley or chives if desired – Enjoy!

The high content of Potassium found in sweet potatoes helps lower blood pressure while also promoting healthy bones and muscles.

Moreover, sweet potatoes have anti-inflammatory properties due to their unique combination of antioxidants like quercetin, lutein and beta-carotene. Finally, sweet potatoes contain choline which is essential for proper brain development and nerve function – making them a great choice for children’s diets!
